Kaulde’s Kolaches (click for pic)


Lizzy Kaulde’s Kolaches

  • 3 c. milk
    1 pkg. yeast
    1/2 c. sugar
    4 egg yolks
    2 t. salt
    6 c. flour
    1/2 c. melted lard
  • Filling – prune, apricot, poppy seed or fruit.

Scald milk, cool. Dissolve yeast and sugar in milk. Add 2 c. flour and mix. Let stand until spongy (about 15 minutes) add salt and beaten egg yolks, lard, and mix. Add flour to make a soft dough. Beat until dough appears glossy. Dough should be just so it will hold [its] shape. (Let rise 40 to 50 minutes). Shape into balls the size of walnuts. Brush with melted butter. Make indentation in tops, fill and bake at 400 degrees for 10 minutes until light brown. Remove from pan and cool. Egg whites makes them tough. (The recipe says to bake at 475 degrees for 10 minutes, but that seems to be too hot.)

This recipe was found in a letter from Genevieve D’Autremont Auld to Katharine Auld Breece, Postmarked 3 November 1989, P.M.; and dated “Sunday”.

Lizzy Kaulde lived in Waubeek, Iowa, and was an ancient lady when I was young. She had a trunk full of lovely old clothes which she generously lent out to folks who used them for costumes, centennial celebrations, &c.

I wore one of her dresses, black taffeta with jet buttons, and a black flat straw hat, when I was twelve or thirteen for the Jordan’s Grove Baptist Church Centennial Celebration. My brother, Richard, who was fifteen or sixteen at the time, wore a cutaway coat and boater hat he’d acquired from her trunk, as well.
